Turkey and Stuffing Muffins

These muffins are a delicious and portable way to use up leftover stuffing and turkey. They are perfect for a quick breakfast, lunch, or snack, and can be easily reheated in the microwave or oven. You can also add other ingredients to the muffins, such as shredded cheese, diced vegetables, or herbs.

Method

  • Preheat the oven to 400 degrees Fahrenheit / 200 degrees Celsius / Gas Mark 6. Lightly grease a muffin tin with cooking spray, and set aside.
  • In a medium mixing bowl, combine the stuffing, turkey, eggs, milk, salt, and pepper. Stir to mix the ingredients evenly.
  • Divide the stuffing mixture evenly among the muffin cups, pressing it down lightly with the back of a spoon.
  • Bake the muffins in the preheated oven for 15-20 minutes, or until the tops are golden and the muffins are cooked through.
  • Let the muffins cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.
  • Serve the muffins warm or at room temperature, with your favourite dipping sauce or condiment.

  • 130g leftover stuffing
  • 130g cooked, shredded turkey
  • 2 eggs
  • 100ml cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
