Rosy Darling's Fantastic Lasagne


Prepare Meat Sauce

  • Put the mince beef, onion and garlic in a large pan and fry over high heat until the meat darkens and keep breaking the meat up
  • Add all remaining ingredients except the sugar
  • Bring to boil and reduce to simmer
  • Simmer until the meat is tender – minimum 45minutes to 1½ hours if possible
  • The meat sauce can be used in a variety of  other ways e.g. Spaghetti Bolognese or on Jacket Potatoes - always delicious

Prepare Cheese Sauce

  • Place milk, flour and butter in a pan and whisk
  • Place pan on the heat and whisking bring to boil – swop to wooden spoon once the flour is evenly mixed in
  • Simmer for 2 minutes and taste – if it tastes of flour keep cooking
  • Remove from the heat and add in grated cheese and mustard if using – keeping a little cheese for the top

Assembling Lasagne

  • Use a dish approx. 12” long and 7” wide and approx. 3” deep.
  • Ladle in meat sauce enough to cover the bottom of the dish
  • Cover with sheets of lasagne
  • Ladle over more meat sauce
  • Cover with lasagne sheets
  • Ladle over the rest of the meat sauce and then use 2tblsp’s cheese sauce just dotted about
  • Cover with lasagne sheets
  • Top with cheese sauce taking right to edges of the dish
  • Sprinkle with grated cheese
  •  This can now be frozen for another day if required

Oven Temperature: 190°C or Gas 5


Meat Sauce

1lb (500g)  Intwood Farm Minced Beef
1 Large Onion, chopped or 80g frozen chopped
3 Cloves garlic, crushed
1 Tin Tomatoes preferably chopped
1 Jar Ragu Sauce
1 Beef Oxo, 100ml boiling water
1 Tablespoon Tomato Puree
1 Tablespoon (Heaped) Branston pickle
Salt and Pepper
¼ Teaspoon Sugar (to taste)
15 Sheets approx. Lasagne 

Cheese Sauce

425ml (15Fl oz or ¾ pt) Milk (at least semi skimmed but not skimmed)
40g Plain Flour
40g Butter (preferably)
150g Strong Mature Cheddar 
½ Tsp English Mustard (optional)
