Fillet steak, also known as filet mignon, is a cut of beef that comes from the tenderloin of the cow, a long, cylindrical muscle that runs along the spine. It’s one of the most prized cuts of steak and is known for its tenderness, buttery texture, and mild, delicate flavour.
Fillet steak is typically leaner than other cuts of steak and has very little marbling. It’s often cut into thick, round medallions and is best cooked quickly over high heat to preserve its tenderness and juiciness. Fillet steak is commonly served rare or medium-rare, and it pairs well with rich, savoury sauces, such as Béarnaise or bordelaise.
