Extra Mature, Extra Aged Premium Beef Rib

From a 12 year old Highland Cross, this extra mature beef is hung as an entire side in our standard fridge for 21 days. Special cuts are then placed in the Himalayan Salt chiller until aged for 60 days, giving a unique flavour of premium extra matured beef.

The Himalayan salt in the chiller maintains a dry atmosphere and hence preserves the beef throughout the ageing process.

Normally reserved for our specialist restaurant customers, we have a limited number of ribs available for our online customers, this product will be removed from our website as soon as it is sold
